Nilesh Menon, Restaurateur & Global Host

With a career spanning continents as a consultant for a leading IT firm, Nilesh Menon has experienced the world’s finest hospitality—from Tokyo to Toronto. Yet in Warsaw, he found himself missing a space that combined elegance with intimacy—a place to host clients and friends with warmth, flavor, and finesse.

That longing led him to Restauracja Podniebna. Drawn by its fresh, seasonal menu and the genuine charm of its team, Nilesh saw the potential to create something truly special. Together with his business partner Arun, a seasoned hotelier from the Netherlands, he reimagined Podniebna as a haven for refined dining and heartfelt hospitality.

Today, the restaurant reflects Nilesh’s vision: a cozy yet sophisticated destination where guests are welcomed like old friends, the cuisine bursts with bold flavors, and every detail—from wine pairings to brunch offerings—is curated with care.

Head Chef – Amir Shrestha

Amir Shrestha is a visionary and artist in the culinary world, who began his career more than 15 years ago. His culinary journeys led him from Singapore to Poland, where he now, as a head chef, introduces innovations and changes the face of the Warsaw gastronomic scene. His meeting with the owner of Podniebna about two years ago at a wedding marked the beginning of a collaboration aimed at a culinary revolution in Warsaw and Poland.

With experience gained in renowned places like the Novotel hotel and the Stixx restaurant, Amir is a master at creating unique dishes from scratch that reflect his creativity and passion for cooking. He values the freedom to act, modify, and experiment, which allows him to continuously develop his skills and share them with the restaurant’s guests. His approach to cooking as an art form translates into an unforgettable culinary experience for anyone who has the pleasure of tasting his creations.
